Ingredients (serves 4): 1 tablespoon oil, 1 small onion, finely chopped 1 green chili, finely chopped ½ inch ginger, finely chopped 7-8 French beans, 1 medium carrot cut into 1 pieces, 2 capsicum, finely chopped ½ Cup cabbage, Salt to taste, Black pepper to taste, 3 cups veg stock, 25 grams noodles made of wheat flour, 1 tbsp soy sauce, 1 tbsp white vinegar, 1 tsp red chili powder and a little brown sugar.
Chopped vegetables for Hot and Savor Noodle Soup: Heat about one tablespoon of butter oil in a deep non stick vessel. Add finely chopped onion to it. Fry for two minutes. Now add finely chopped green chillies and chopped ginger to it and fry for 30 seconds. Now add long and thinly sliced carrots and French beans, fry for 1 minute. Add long and thinly sliced capsicum and fry for 30 seconds. Add long chopped cabbage, salt, and crushed black pepper. Mix well. While roasting the soup vegetables, now add about 3 cups of hot vegetable stock and bring it to a boil. Now add noodles and boil the soup for about a minute or until the noodles are cooked. Add chili sauce and a little sugar and stir the soup well. Switch off the flame. Now add vinegar to the soup. Taste once and check the soup, if needed, add some spices and fix the soup according to your taste. Tasty and nutritious soup of vegetables and noodles is now ready. Serve this soup very hot.
